Ajmal Mushtaq is the Chef Director of the newly opened Mushtaqs Restaurant in Hamilton which is one of the coolest places to eat. As well as running the business, he takes the helm in the kitchen.

Describe your workplace?
A place with loads of energy, fun and passion. There is a real buzz around the place at the moment.

What’s the dress code?
Crisp white top– open collar, black trousers, black shoes. We believe in being smart casual. Gone are the days of bow ties, black shirts. A uniform inspection takes place at the start of every shift to ensure that team are looking crisp.

Do you have any qualifications?
LLB – Bachelor of Laws, MFin – Masters in Finance, MAcc – Masters in Management Accounting all from the University of Glasgow.REHIS - Food Hygiene Qualification.

What was your first job?
Working in the family business for a five years.

Do you get on well with your colleagues?
Yes – the people here are our most important asset - and they are a great team! We are from all different backgrounds and all have something special to bring to the team.

What’s been the biggest challenge of your career?
Transforming a restaurant in the middle of a recession but we are doing very well.

What’s the highlight of your career?
Re-branding and renovating Mushtaqs to make it one of the coolest places to eat. Its great waking up with a terrific idea one day and then making it come to life.

What skills do you need?
A real passion for cooking, energy, excellent people skills and enthusiasm .

What advice would you give someone looking for a similar career?
Getting going is one of the toughest phases but roll your sleeves up and be involved in every aspect. You have to put on a lot of hats every day but it is worth it when it all comes together.

What’s your dream job?
This is my dream job!

Which celebrity would you most like to work beside?
Alex Ferguson – an expert in people management.

How do you unwind after work?
